Who we are
Lolette was born from a simple passion: coffee.
Its founder, Adrien Simion, started with an almost naive question — why is one coffee better than another? This curiosity led him to explore the origin of coffee: the farms, the tree varieties, the cultivation methods.
Almost by chance, this research led him to roasting. Traveling regularly in Scandinavia, he discovered another way of approaching coffee: a light, precise roast, respectful of the product and the work of the producers. This Nordic philosophy became a real turning point.
Lolette then started as a micro-enterprise, on a small scale, for a year and a half — a time of experimentation, learning, and encounters, almost like market research.
And against all expectations, the project quickly found its audience.
Today, Lolette continues to build itself with the same intention: to understand coffee, respect its origin, and reveal its most singular qualities.
Adrien Simion, founder and roaster, is behind the brand. He selects and roasts each coffee with absolute rigor, giving LOLETTE its identity.

Victor Touzet, co-founder, handles business development, event creation, and the coffee shop experience — he gives LOLETTE its presence, its influence, and its life.
The art behind every cup
At LOLETTE, offering a new coffee is also a creation. Each visual that adorns our universe is an original painting created by Adrien Simion, photographed even before the paint is dry — thus capturing all the vibrancy, the raw texture.
Our philosophy
We believe that every cup tells a story. That of a farmer, a soil, a climate. That's why we work directly with trusted producers — like James on the El Triángulo farm in Colombia, or the teams at the Wete Ambela washing station in Ethiopia — to offer you traceable, ethical, and high-quality coffees.

Our origins
Our selection travels between three major coffee regions:
- Colombia — Floral and fruity coffees from family farms in Huila and the Andean highlands.
- Ethiopia — The birthplace of coffee. Delicate profiles with notes of jasmine, peach, and Earl Grey, grown at over 2,000 meters above sea level.
- Kenya — Intense and complex coffees with notes of redcurrant and apricot jam, from the washing stations of Kiambu County.
